I've always loved pineapple upside down cake, but have never made it from scratch just from the box. I got this recipe from my Martha Stewart Baking Handbook and wanted to give it a try. It was pretty simple to make and turned out just like the picture. I haven't tasted it yet and there might be a difference in taste do to the addition of mango, but I will report back on that.
